Jeremy Allen White of FX’s The Bear visits Mr. Beef in Chicago’s Orleans, the site of inspiration for the character’s restaurant

Chicago — “Bear” from FXs stars Jeremy Allen White as a rising chef, Carme Berzato, who takes over his family’s Italian beef wing after his brother’s death. The restaurant in the chain is inspired by Mr. Beef on Orleans, an old staple in Chicago’s River North neighborhood that Allen visited recently.

“I love Chicago,” White says. “It’s so beautiful and it’s a great city.”

White says he trained at a culinary school and worked in a Michelin-starred kitchen to prepare for his role. He went the extra mile to look tired and sweaty to reflect what he had seen from the cooks and cooks he worked with.

“We’ve had sinks in place pretty much before any take, what I’ve been doing is putting water in my hands and styling my hair,” White says.

Carme has a set of tattoos for the character in the show, which had to be applied to White by friend and artist Ben Shields.

“It was a really fun process because you can kind of get to know a character through the art they have,” White says.

White says he admires the sacrifices those in the hospitality industry make to succeed.

“I see every restaurant as a miracle now because it’s so competitive, especially in Chicago, Los Angeles, and New York,” White says. “It’s crazy to have a restaurant that’s been open for years and new customers and customers come back and I don’t know what keeps that consistent.”
